homemade gourmet skittles
SKITTLE INSIDE:
Mix 6 tbsp. sugar and 2 tsp citric acid. do 4 times in 4 separate bowls. bowl #1 add 4 limes zest,
bowl #2 add 3 lemons zest, bowl #3 add 2 oranges zest, and bowl #4 add 1 oz. pulverized freeze dried strawberries. sift out chunks in strawberries.
mix together 1/4 cup water in large sauce pan, 4 tbsp. butter, 1 cup like light corn syrup, 2 cup sugar, 3 tbsp. cornstarch, and 1/2 tsp kosher salt. stir over medium-high heat until sugar is dissolved. stop stirring till sugar comes to a boil. cook washing down sides with pastry brush until mixture reaches 250 degrees F. remove from heat, mix in 2 tbsp. butter, pour mixture onto 4 baking sheets, let cool until cool enough to handle, get 3 other people to pull the taffy until not clear and can hold its shape. mix the 4 taffy's into their flavor. cover and chill candy until set, scoop with 8 tsp and roll between palms, squish down a little bit to make a skittle shape.

mix 1 tbsp. powdered gelatin in cold water for 10 min., whisk together in separate bowl 1 cup powdered sugar, 1/2 cup cornstarch, and 1 pinch of cream and tarter. put measuring cup with gelatin in 1 inch barley simmering water, stir to dissolve gelatin, pour liquid into a well you form with the mixture in the bowl, knead until all mixed in and is smooth, when done cover. roll out 1/2 tsp pieces of mixture until paper thin. place filling in middle and squirt with a little bit of water, press into 1/8 tsp and cover with mixture, pinch and trim excess. repeat with all flavors. let dry at room temperature. you can add color with what ever edible coloring you have I recommend food markers.
